Astaxanthin is a type of carotenoid, a natural pigment present in various foods.

Carotenes are found in vegetables and fruits, and beta-carotene in orange or dark green ones. Astaxanthin is responsible for the reddish-orange color of lobster, salmon, and some algae, and for the pigment that gives flamingos their characteristic color.
