Shiitake (Lentinula edodes) is a mushroom native to Japan; rich in protein, iron, fiber, minerals and vitamins (especially riboflavin and niacin). It contains a large amount of antioxidants (vitamins A, E, C, selenium, and superoxide dismutase), and "lentin", which is a known cell protector . Lentin is a sugar derivative and has been used experimentally in humans and animals as an anticancer agent . Its effect is indirect through the stimulation of white blood cells (lymphocytes) and the production of interferon, the hormone that stimulates the immune system. Interferon is used in cancer treatments and as an antiviral, anti-inflammatory, and for the treatment of hepatitis B; it contains substances that reduce cholesterol by between 5% and 10%. It also contains the precursor of vitamin D, which is converted into the active form (D3) with sun exposure.
