Wheat germ, obtained by milling pure wheat, is extremely nutritious. Rich in protein, fat, amino acids, minerals (sodium, potassium, calcium, phosphorus, magnesium, iron, and fluoride), and vitamins (A, E, B1, B2, B3, and B6). Of all foods, wheat germ offers the highest amount of vitamin E (0.6g of vitamin E per 100g of germ oil), a powerful antioxidant and cardiovascular protector. After brewer's yeast, it is the food with the highest folic acid content; it is also high in protein and vitamin K, and has traces of zinc, copper, manganese, and selenium.
