Wheat germ, obtained by grinding pure wheat, is extremely nutritious. Rich in proteins, fats, amino acids, minerals (sodium, potassium, calcium, phosphorus, magnesium, iron, and fluorine) and vitamins (A, E, B1, B2, B3, B6). Among all foods, wheat germ comparatively offers the largest amount of vitamin E (0.6g vit E/ 100g germ oil), a powerful antioxidant and cardiovascular protector. After brewer's yeast, it is the food that contains the most folic acid; its content of proteins, vitamin K, and traces of zinc, copper, manganese, and selenium is also high.
